I know what you might be thinking here but you are just gonna have to trust me on this one! Pumpkin preserves have been a part of my personal culture since the beginning. In it’s simplest form chunks of pumpkin are simmered with citrus, sugar, and spices and either pureed or left chunky. It’s then slapped on bread or served with cheese and desserts especially around the holidays as pumpkins are tied with good fortune. I was once told because they are round like coins they are tied directly to financial good fortune especially around the new year. So we decided to make our own version of this classic. We have taken local cheese pumpkins from long island and cooked them down with, fresh squeezed OJ, fall spices and at the very end steeped w/ fresh rosemary. The end result is a delicious unique flavor. You have to try it to believe it. We promise you will love it though!
