Many people don't realize this but citrus comes into season starting in December and it isn't actually a summer fruit. Fortunately citrus also sits on a tree well after it ripens and you can pick the fruits for months after the fact. The peak flavor though is when they first ripen. So all that being said we really like making a plethora of citrus jams in winter. One of those such jams is our fan favorite meyer lemon. Many folks are familiar with this lemon because its sort of like a lemon that got had a love child with a mandarin orange. Because it is!
