As summer comes to a close one of the things we try to hold onto the most are heirloom tomatoes. There is no better way than this preserve right here. Heirloom tomatoes are cooked down with chili flakes and lots of good red wine vinegar. The end result is what the Italians refer to agridulce or better known as sweet and sour with the addition of a kick! Late summer in a jar.
Ingredients Heirloom tomatoes, Red wine vinegar, Sugar, Chili flake, Oregano, Pectin, Sea salt
Notes This is what you would consider a savory jam. The beautiful thing is that its uses go beyond your typical jam. We use the slightest amount of pectin in this to give it a soft set and usually use it right from the refrigerator.
Uses Drizzled over Mozzarella or pizza good crusty breads and sandwiches topping for seared meat and fish
