Notes Both of these jams are best served from the refrigerator for optimal consistency.
Fig & Port Jam We try to use little to no pectin in our jams and rely on the fruit for the body whenever we can. For this jam we have added just a touch of pectin since two bottles of wine go into each small batch! We then puree it to get a soft set jam.
Classic Fig Jam This jam is done in the french style of jam making. This has no pectin and simply relies on the ingredients. The result is a fruit in syrup style preserve.
