As I’ve said before we are really getting into citrus season now and we couldn't be more excited. Our latest unique product comes from Tavi's love of tea and bergamot. Its not often that you get to handle fresh bergamot and let me be clear its not the easiest product to work with. Although making this, the apartment smells unbelievable for a long while! After blanching the chopped up citrus to leach out as much of the pithy flavor as possible it’s then cooked down with sugar, it’s own juice, a little pectin and sea salt and finally finished with high quality loose earl grey tea leaves. The end result is a floral flavor bomb that hits so many notes. You will absolutely love this jam in the morning with your yogurt or whipped ricotta.
