Strawberry Elderflower Jam This jam is done in the American style which means its thicker then its European cousins which usually consist of fruit in syrup. For this jam we have taken local strawberries and cooked them down with lemon juice, apple pectin and sugar to reach the right consistency. Then right before its jarred with drizzle in elderflower syrup did drive home that floral expression.
