Yuzu is quite possibly one of our favorite citrus fruits. The aromatics alone are worth the wait for their fall/winter season. In fall the green fruits are available before they get fully ripe into their yellow stage. The green fruit has a bit sharper flavor and aromatic which we think lends best to jam making. Although any yuzu is good yuzu!
